INGREDIENTS
- 25-30 pre-cooked Shrimp (raw can be used as well)
- 12 Corn Tortillas
- Broccoli Slaw or Coleslaw
- Cilantro (Chopped)
- Lime
- Avocado (Diced)
- Cilantro Avocado Yogurt Dressing (can be found at Walmart)
- ¼ tsp. Chili Powder
- ¼ tsp. Paprika
- ⅛ tsp. Cayenne Pepper (omit if you want it less spicy)
- Olive Oil
- Salt to taste
INSTRUCTIONS
Cook the Shrimp:
- Heat 1-2 tablespoons of olive oil in a medium-sized skillet.
- Add the shrimp and spices, mixing. Cook for about 2 minutes if you’re using pre-cooked shrimp, just to heat them. If using raw shrimp, increase your cooking time by a couple of minutes until the shrimp are pink and opaque.
Prepare the Tortillas:
- In a preheated skillet, add a little bid of oil and place 1 tortilla. Heat on each side for about 20 seconds. This step makes the tortillas more pliable and adds a slight toast for extra flavor.
- Alternatively, you can soften the tortillas in the microwave.
Assemble the Tacos:
- Take 2 tortillas and stack them on top of each other. This is optional, as using 1 tortilla is also fine but 2 gives extra thickness and support for the fillings.
- Layer with slaw, then add 4-5 cooked shrimp on top.
- Add cilantro and slices of avocado.
- Squeeze lime over the tacos for that zesty kick.
- Top it off with a drizzle of the cilantro avocado yogurt dressing.
